Trim and pound

Trim any excess fat or silver skin from the pork loin chops. If chops are uneven in thickness, place between two sheets of plastic wrap and gently pound with a meat mallet to an even thickness of about 1/2 inch to 3/4 inch for even cooking.

Prepare marinade

In a medium bowl whisk together olive oil, soy sauce, Dijon mustard, apple cider vinegar, brown sugar, minced garlic, chopped rosemary, smoked paprika, kosher salt, and black pepper until smooth and emulsified.

Marinate chops

Place chops in a large resealable bag or shallow dish. Pour marinade over chops, press out excess air, and gently massage so each chop is evenly coated. Refrigerate for at least 1 hour and up to 4 hours. If short on time, allow 20–30 minutes at room temperature.

Bring to room temperature

Remove chops from refrigerator 20–30 minutes before grilling to take the chill off (keeps grill time even). Reserve marinade for basting if desired, or discard excess marinade used with raw meat.

Grilling & Finishing

Preheat grill

Preheat a gas or charcoal grill to medium-high heat, roughly 400–450°F (205–230°C). Clean and oil the grill grates to prevent sticking.

Grill chops

Place pork chops on the hot grill. Cook uncovered 3–5 minutes per side depending on thickness. Start with 3 minutes per side for 1/2 inch chops, up to 5 minutes per side for 3/4 inch. Flip once using tongs. Optionally baste with reserved marinade during the last minute of cooking (if marinade was boiled 1–2 minutes to be safe) or use fresh basting sauce.

Check doneness

Use an instant-read thermometer inserted into the thickest part of a chop. Remove from grill when internal temperature reaches 145°F (63°C). Carryover will raise the temperature slightly during resting.

Rest and finish

Transfer chops to a clean tray. Place 1/4 tablespoon of unsalted butter on top of each chop so it melts while resting. Tent loosely with foil and rest 5 minutes to allow juices to redistribute.

Garnish and serve

Sprinkle chopped fresh parsley over the rested chops and serve with lemon wedges on the side for guests to squeeze over. Serve immediately while warm.
