Parmesan-Encrusted Bread

Prepare cheese butter

In a small bowl, combine softened unsalted butter, olive oil, grated Parmesan, and garlic powder. Stir until a spreadable paste forms and season with a pinch of black pepper.

Assemble on bread

Lay 8 slices of ciabatta or sourdough on a work surface. Spread the Parmesan-butter paste evenly on one side of each slice so the paste will be on the exterior when assembled (outer faces).

Toast

Preheat a skillet over medium heat or the broiler on high. If using a skillet, place slices paste-side down and cook 2–3 minutes until golden and the cheese is melded and crisping; flip briefly (30–45 seconds) if you want the interior warmed. If using broiler, place slices paste-side up on a baking sheet and broil 2–4 minutes until bubbling and golden—watch carefully to avoid burning. Remove and set aside to cool slightly.

Prepare Fillings

Prepare avocado

Halve, pit, and scoop the avocado into a bowl. Mash lightly with a fork leaving some texture, season with 1/4 tsp kosher salt, 1/8 tsp black pepper and 1/2 tsp lemon juice. Set aside.

Slice vegetables

Slice the tomato into 1/4-inch thick rounds. Thinly slice 1/4 of a red onion into rings or half-rings. If using lettuce leaves, rinse, dry, and tear into sandwich-sized pieces.

Warm turkey (optional)

If you prefer warm turkey, briefly heat the turkey slices in a skillet over medium for 1–2 minutes per side or microwave in a single layer covered with a damp paper towel for 20–30 seconds. Keep warm until assembly.

Assemble Sandwiches

Lay 4 of the toasted bread slices Parmesan-side down on your work surface so the crisped Parmesan is external. On each bottom slice, spread about 3/4 tablespoon of mayonnaise (approximately 3 tbs total across sandwiches) and, if using, 1/4 tsp Dijon mustard divided among them.

Spread about 2 tablespoons of the mashed avocado on top of the mayo on each sandwich bottom, leaving a small border to avoid squeezing out when closed.

Layer 2 ounces (about 2 slices) of roasted turkey over the avocado on each sandwich. Season turkey lightly with a small pinch of salt and pepper if desired.

Top the turkey with a few lettuce leaves (about 1/2 cup per sandwich), 2–3 tomato slices, several thin red onion rings, and 3 dill pickle slices each. Add microgreens or basil if using.

Spread a thin layer (about 3/4 teaspoon) of mayonnaise on the inside of the remaining 4 toasted bread slices and place them mayonnaise-side down to close each sandwich so the Parmesan-crisped sides face outward.

Press each sandwich gently, then cut on the diagonal. Serve immediately.
