Remove the Manchego, blue cheese, and optional soft cheese from the refrigerator 30–45 minutes before serving to bring them to near room temperature. This allows flavors and textures to open up.

Crumble or portion the blue cheese into spoonable chunks and place in a small bowl if the texture is very creamy. If using a soft cheese, form small quenelles with a spoon or spread onto a cracker just before serving.
