Focaccia Preparation

Activate Yeast

In a small bowl, combine warm water and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Dough

In a large mixing bowl, combine the flour and sea salt. Create a well in the center and add the yeast mixture and olive oil. Mix until a soft dough forms.

Knead Dough

Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat Oven

Preheat your oven to 425°F (220°C).

Prepare Baking Pan

Grease a baking sheet or pan with olive oil. Once the dough has risen, punch it down and spread it out onto the pan, pushing it to the edges.

Second Rise

Cover the dough again and let it rise for another 20-30 minutes.

Dimple and Season

Use your fingers to create dimples all over the surface of the dough. Drizzle with olive oil and sprinkle with sea salt and rosemary if using.

Bake

Bake in the preheated oven for 20-25 minutes or until golden brown.

Cool and Serve

Allow the focaccia to cool slightly before cutting. Serve with heirloom tomato and basil oil.
