Prepare and season

Trim the base of each baby gem head to remove any loose or brown outer leaves. Slice each head in half lengthwise through the core so the halves stay intact.

Brush the cut faces and outer leaves lightly with 1 tbs of extra-virgin olive oil. Season both cut faces with a light pinch of sea salt and a grind of black pepper (reserve remaining oil and salt for finishing).

Preheat a grill or heavy cast-iron skillet to medium-high heat (around 200–230°C / 390–450°F). The surface should be hot and lightly smoking for good char.

Place the cut sides of the baby gem halves directly on the grill or skillet. Cook undisturbed for 2–3 minutes until well charred and caramelized. Flip and char the outer leaf side for another 1–2 minutes, just to warm through. Remove from heat and set aside, cut-side up.

Make the cheese base

In a medium saucepan, combine the whole milk, heavy cream, and unsalted butter. Warm gently over medium-low heat until steam appears but do not boil.

Whisk in the grated manchego a handful at a time until fully melted and smooth. Keep the heat low to prevent separation. If the mixture seems too thin, dissolve the cornstarch slurry (1 tsp cornstarch mixed with 1 tsp cold water) and whisk it in to slightly thicken. Remove from heat.

Season the mixture with 1/4 tsp salt, 1/4 tsp white pepper, and the lecithin powder if using. Lemon is not required here; the piparras provide acidity later. Let the mixture cool to warm (about 40–50°C / 105–120°F).

Strain the warm cheese mixture through a fine-mesh sieve into a bowl or pitcher to remove any solids and ensure a smooth espuma. Transfer the strained liquid into a 1-2 cup capacity whipped cream siphon. Charge the siphon with one N2O charger, shake vigorously 4–6 times, then chill in the refrigerator upright for at least 30 minutes (chilling helps stabilize the foam). If a thicker foam is preferred, use two chargers but follow siphon manufacturer's guidance.

Before plating, test the siphon over a bowl and dispense to check texture. If too runny, chill longer; if separated, rewarm gently, re-sieve, refill and re-charge.

Piparra Pepper Garnish & Finish

While the espuma chills, prepare the piparras: drain pickled piparra peppers and slice lengthwise into halves if not already halved. Pat lightly with paper towel to remove excess brine.

In a small bowl combine 2 tsp extra-virgin olive oil and 1 tsp fresh lemon juice; whisk briefly. Toss the halved piparras gently in the dressing to coat.

To assemble: place a grilled baby gem half (cut side up) on each plate. Shake the siphon and dispense a light cloud of manchego espuma across the cut face of each gem—aim for a thin, airy layer rather than a heavy pour.

Arrange 2 piparra halves on each baby gem (or scatter as desired). Drizzle a few drops of the remaining olive oil around the plate, sprinkle a small pinch of smoked paprika if using, and finish with microgreens or chopped chives. Taste and add tiny pinches of sea salt if needed.

Serve immediately while the grilled gem is warm and the espuma is airy.
