Prepare cheeses
Shred or chop the American and cheddar cheeses and cube the softened cream cheese so they will melt evenly. Toss the shredded cheeses with the cornstarch in a medium bowl to prevent separation and clumping during melting.
Add cream cheese: reduce heat to low and whisk in the cream cheese cubes until fully incorporated and smooth.
Melt in shredded cheeses: add the cornstarch-coated shredded cheeses in small handfuls, stirring constantly with a heatproof spatula or whisk until each addition is melted and the mixture is smooth and glossy. Keep heat low so cheese melts without separating; this should take about 4–6 minutes.
Aromatics & Seasoning
Combine aromatics with queso: fold the cooked onion and garlic into the melted cheese base. Stir in the drained diced green chiles, ground cumin, smoked paprika, salt, and black pepper. Continue to cook on very low heat 2–3 minutes to marry flavors, stirring to maintain smooth texture.
Finish & Garnish
Adjust consistency: if the queso is too thick, stir in up to 2 tablespoons of warm milk, 1 tablespoon at a time, until you reach a dipable consistency. If it becomes too thin, cook a minute longer, stirring, until thicker. Taste and adjust salt and pepper as needed.
Finish with bright flavors: remove saucepan from heat and stir in the fresh lime juice and chopped cilantro. If using, fold in chopped pickled jalapeños and/or crushed red pepper flakes for extra heat.
Serve: transfer the queso to a warmed serving bowl. Garnish with a sprinkle of chopped cilantro and a few extra diced chiles or jalapeños if desired. Serve immediately with tortilla chips.
Make-ahead & reheating tip: queso can be kept warm in a small slow cooker on the low/keep-warm setting for up to 2 hours. To reheat, gently warm in a saucepan over low heat, stirring in a splash of milk to restore creaminess.
