Method
Quick-Pickled Red Onion (make first, optional)
If using store-bought pickled onions skip this step. Place the sliced red onion in a heatproof jar or bowl.
In a small saucepan combine apple cider vinegar, water, sugar, and salt. Warm over medium heat just until sugar and salt dissolve, about 1–2 minutes; do not boil.
Pour the warm brine over the sliced onions, press them down so they are submerged, let cool to room temperature, then refrigerate at least 20 minutes (up to several days). Drain before using.
Candied Bacon (make first, optional)
Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top.
Lay bacon slices in a single layer on the rack. Sprinkle brown sugar evenly over each slice and finish with a light dusting of black pepper.
Bake 12–18 minutes, watching closely: bacon should be crisp at the edges and caramelized but not burnt. Thicker bacon may take longer. Remove and let rest 2–3 minutes on the rack — sugar will harden as it cools. Chop or break into bite-sized pieces when slightly cooled.
Toasted Bread
Preheat oven to 425°F (220°C) or set a grill pan over medium-high heat.
Arrange slices on a baking sheet and toast in the oven until golden and crisp, 6–8 minutes, flipping once halfway. Alternatively, grill in a pan 1–2 minutes per side until charred spots appear. Let cool slightly.
Avocado Spread
Halve the avocados, remove pits, and scoop flesh into a medium bowl.
Assembly & Toppings
Place toasted bread slices on a platter. Spread about 1 heaping tablespoon (roughly 15–20 g) of the avocado mixture over each slice, covering to the edges but leaving a small border so it doesn’t spill.
Top each toast with 3–4 halved cherry tomatoes arranged cut-side up.
Add a few thin ribbons or pieces of candied bacon on each slice (about 1/2 slice worth per toast).
Scatter quick-pickled red onion over the toasts, about 1 teaspoon per slice, to add bright acidity.
Sprinkle crumbled cotija evenly across the toasts, roughly 1 tablespoon per slice.
Finish with a small handful of microgreens on each piece, a light dusting of black pepper, and optional lime zest for brightness.
Serve immediately so bread remains crisp. If preparing ahead, keep components separate (toast, avocado spread, bacon, pickles) for best texture.
