Method
Tortilla & Cheese
Arrange chips
Preheat oven to 400°F (200°C). On a large rimmed baking sheet or ovenproof platter, spread 6 cups of tortilla chips in an even single layer, leaving small gaps for toppings. Reserve remaining 6 cups for a second layer or for serving on the side.
Layer cheese
Sprinkle half the cheddar and half the pepper jack evenly over the chips. Once the first layer is added, distribute the remaining chips over the cheese for a second layer and top with the remaining cheeses so cheese melts between layers.
Seasoned Beef
Brown beef
Add the ground beef to the skillet, breaking it up with a spatula. Cook 6–8 minutes until browned and no pink remains.
Season
Stir in tomato paste, chili powder, cumin, smoked paprika, salt, pepper and 1 tablespoon water. Cook 2–3 minutes, stirring, until the spices are fragrant and the mixture is slightly saucy. Taste and adjust salt or heat as desired. Remove from heat and set aside.
Distribute
Evenly spoon the cooked beef over the cheese-layered chips, focusing on distributing protein across the surface so each bite will have some meat.

Scatter the drained and rinsed black beans evenly over the chips and beef. Add the 1 teaspoon pickled jalapeños now if you want heat incorporated under the cheese; reserve extra sliced jalapeños for final garnish.
Bake & Melt
Place the assembled nachos in the preheated oven and bake 6–8 minutes, or until cheese is fully melted and edges of chips are just starting to brown. For an extra bubbly top, switch to broil for 30–60 seconds—watch closely to prevent burning.
Fresh Toppings
Remove nachos from oven. Immediately sprinkle diced tomatoes, sliced green onions, chopped cilantro, and diced avocado over the hot melted cheese so they nestle into pockets. Squeeze lime wedges over the top to taste.
Sauces & Serving
Drizzle warmed queso or spoon it in small pools across the tray. Add spoonfuls of salsa and dollops of sour cream. Offer extra pickled jalapeños and hot sauce at the table. Serve hot on the baking sheet or transfer to a large platter; enjoy immediately.
