Asparagus

Method

Prepare asparagus

1

Trim

Rinse the asparagus under cold water to remove any dirt. Hold a spear near the woody end and bend until it snaps to determine the natural break point; use that as a guide to trim the remaining spears with a knife so all are about the same length. Alternatively, trim the bottom 1–1.5 inches off each spear.

2

If spears are very thick, peel the lower 1–2 inches of the stalks lightly with a vegetable peeler to remove tough outer fibers. Pat the asparagus dry with a towel.

Steam asparagus

3

Place 1 cup of water and 1 teaspoon kosher salt in a medium saucepan fitted with a steamer basket (or use a wide skillet with a tight-fitting lid and a metal colander). The water should sit below the bottom of the basket/colander so the asparagus is steamed, not boiled.

4

Bring the water to a gentle boil over medium-high heat. Add the asparagus to the steamer basket in a single layer if possible; if needed, arrange thicker ends toward the edge for even cooking.

5

Cover and steam until the asparagus is bright green and just tender when pierced with a knife or tipped with tongs: 3–4 minutes for thin spears, 4–6 minutes for medium, 6–8 minutes for very thick spears. Check at the shorter time to avoid overcooking. Remove the asparagus immediately to a serving plate to stop cooking.

Make lemon butter sauce

6

While the asparagus is steaming (or immediately after removing it), melt 4 tablespoons unsalted butter in a small saucepan over low heat. Do not let the butter brown; keep it warm but not bubbling vigorously.

7

Add 1 teaspoon minced garlic to the melted butter and gently warm for about 20–30 seconds until fragrant (do not brown). Remove from heat.

8

Stir in 2 tablespoons fresh lemon juice and 1 teaspoon lemon zest into the butter and garlic. Season with 1 teaspoon salt and 1 teaspoon freshly ground black pepper, tasting and adjusting seasoning as needed. For a silkier finish, whisk in 1 teaspoon extra-virgin olive oil (optional). Keep the sauce warm.

Finish and serve

9

Arrange the steamed asparagus on a serving platter. Spoon the warm lemon butter sauce evenly over the spears so each receives a little sauce.

10

If using, sprinkle 2 tablespoons toasted sliced almonds or shaved Parmesan over the asparagus and serve with lemon wedges on the side for extra brightness.

11

Serve immediately so the asparagus remains tender-crisp. Leftovers can be refrigerated in an airtight container for up to 2 days; reheat gently to avoid overcooking.
