Mix dry ingredients
In a medium bowl, whisk together 1 cup all-purpose flour, 2 tbsp cornstarch, 1 tsp baking powder, 1 tsp garlic powder, 1 tsp onion powder, and 1 tsp paprika until evenly combined.
Combine wet and cold liquid
In a separate bowl, lightly beat 1 large egg. Add the egg to the dry mixture, then gradually whisk in 3/4 cup very cold sparkling water or cold beer until a smooth, slightly thick batter forms. Do not overmix; a few small lumps are fine. The batter should coat the back of a spoon but still be fluid.
Dredge
Prepare dredging stations
Set up three shallow bowls or trays: one with 1 cup flour (for dredging) seasoned with 1 tsp salt and 1 tsp pepper, one with the prepared batter, and one with 1 cup breadcrumbs or panko (if using) or extra flour.
Coat mushrooms
Working in small batches, toss a mushroom in the dredging flour to coat, shake off excess, dip fully into the batter letting excess drip off, then place into the breadcrumbs/panko for a final coating (optional). Place coated mushrooms on a wire rack and let rest 5 minutes to set the coating.
Frying
Heat oil
Pour about 3–4 cups neutral oil into a deep skillet or Dutch oven, filling the pot no more than one-third full. Heat oil over medium-high until it reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test with a small drop of batter: it should sizzle and rise immediately.
Fry mushrooms
Fry mushrooms in batches (do not overcrowd) for 2–3 minutes per side, turning as needed, until evenly golden-brown and crisp. Maintain oil temperature between 330–360°F (165–180°C), adjusting heat as necessary.
Drain
Using a slotted spoon or spider, transfer fried mushrooms to a wire rack set over a baking sheet or paper towels. Immediately sprinkle lightly with a pinch of salt. Let rest 2–3 minutes so interior finishes cooking and exterior stays crisp.
Creamy Ranch Dipping Sauce
Mix sauce
In a small bowl, whisk together 1 cup mayonnaise, 1/2 cup sour cream or Greek yogurt, and 2 tbsp buttermilk until smooth. Stir in 2 tbsp finely chopped chives, 1 tbsp finely chopped parsley, 1 tsp dried dill, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, 1 tsp black pepper, and 1 tsp lemon juice. Adjust consistency with additional buttermilk (1 tsp at a time) if too thick.
Chill
Refrigerate the ranch at least 15 minutes to allow flavors to meld (up to 2 hours). Taste and adjust seasoning before serving.
Serve
Arrange fried mushrooms on a platter with the chilled creamy ranch in a small bowl. Serve immediately while hot and crisp. Leftover mushrooms can be reheated in a 375°F (190°C) oven for 6–8 minutes to re-crisp.
