Prepare vegetables

Select about 500 g of seasonal vegetables (examples: asparagus trimmed, carrots cut into 1/2-inch batons, broccoli cut into florets, zucchini sliced, or green beans trimmed). Try to choose 2–3 types for contrast. Pat dry. Cut to roughly uniform sizes so they cook evenly.

Slice aromatics

Peel and thinly slice 1/2 yellow onion. Smash and mince 2 garlic cloves. Chop 2 tablespoons fresh herbs finely and set aside, reserving a teaspoon for garnish.

Heat pan

Place a large sauté pan or skillet over medium-high heat. Add 2 tablespoons extra-virgin olive oil and 1 tablespoon unsalted butter. Allow butter to melt and oil to shimmer but not smoke (about 1 minute).

Sauté aromatics

Add the sliced onion to the pan and sauté 2–3 minutes until translucent and beginning to soften. Add the minced garlic and cook 30–45 seconds until fragrant, stirring constantly to avoid burning.

Cook vegetables

Add the prepared vegetables that take longer to cook first (for example carrots, asparagus thicker stalks, broccoli). Toss to coat in fat, then season with 1 teaspoon sea salt and 1/2 teaspoon freshly ground black pepper. Cook, stirring occasionally, for 4–6 minutes. Add quicker-cooking vegetables (zucchini, thin asparagus tips, green beans) and continue to sauté until all vegetables are tender-crisp, about 3–5 more minutes. Adjust heat as needed so vegetables brown slightly without burning.

Finish with flavor

When vegetables are just tender, sprinkle 1/4 teaspoon red pepper flakes if using and add 1 tablespoon lemon juice. Toss in 2 tablespoons chopped fresh herbs. Taste and adjust seasoning, adding a pinch more salt or a grind more pepper if desired.

Plate and garnish

Transfer the vegetables to a warmed serving plate. Sprinkle with the reserved teaspoon of fresh herbs and 2 tablespoons grated Parmesan or crumbled feta if desired. Serve immediately while warm.

Leftovers keep tightly covered in the refrigerator for up to 3 days; reheat gently in a skillet over medium heat with a splash of oil to refresh texture.
