Prepare the Batter

In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the beer until the batter is smooth.

Fry the Halibut

Heat oil in a deep fryer or large pot to 350°F (175°C). Dip each halibut fillet into the batter, allowing excess to drip off. Carefully place in hot oil and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.

Prepare the Potatoes

Cut the kennebec potatoes into thick fries. Rinse in cold water and dry thoroughly.

Fry the Fries

In a large pot, heat the vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-6 minutes. Remove and drain on paper towels, seasoning with salt to taste.

Tartar Sauce

Mix the Sauce

In a small bowl, combine mayonnaise, chopped pickles, capers, lemon juice, and dill. Mix well and adjust seasoning to taste.

Coleslaw

Prepare the Slaw

In a large bowl, combine shredded cabbage and carrot. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, and salt. Pour the dressing over the cabbage mixture and toss to combine. Chill before serving.
