Prepare glass

Select a highball or Collins glass. Fill the glass with ice to chill while you assemble the cocktail.

Combine spirits and citrus

In a mixing glass or shaker filled with a little ice, pour 2 oz Gosling's Black Seal Rum, 0.75 oz Licor 43, and 0.5 oz fresh lime juice. Stir gently for about 10–15 seconds just to chill and integrate β€” do not vigorously shake (we want to preserve the ginger beer's effervescence).

Assemble

Discard the ice from the chilled serving glass if it has become watered down, then refill with fresh ice. Strain the mixed spirits and lime over the fresh ice in the serving glass.

Top with ginger beer and bitters

Top the drink with about 4 oz ginger beer. Add 2 dashes of Angostura bitters over the top to add aromatic depth and a hint of spice. Give the drink one gentle stir (2–3 rotations) to combine without losing fizz.

Garnish and serve

Garnish with a lime wheel or wedge on the rim and optionally a piece of candied ginger on a pick. Serve immediately with a straw if desired.
