Chill and prepare garnishes

Place the Sauvignon Blanc and club soda in the refrigerator at least 1 hour before serving so they are well chilled. Meanwhile, using a vegetable peeler, shave 3 long cucumber ribbons from a firm cucumber. Cut a thin lime wheel and pick 2 small mint sprigs. Keep garnishes chilled.

Mixing Cocktail

Combine base ingredients

In a large mixing glass or pitcher, add 1.5 cups chilled Sauvignon Blanc, 1 tablespoon elderflower liqueur, 2 teaspoons fresh lime juice, and 1 teaspoon simple syrup. Stir gently for 10–15 seconds to combine flavors without flattening the wine.

Add sparkle

Slowly pour in 0.5 cups chilled club soda and add 2 dashes of Angostura bitters. Give one gentle stir (4–5 seconds) to incorporate the soda and bitters while preserving effervescence.

Assemble & Serve

Build the glass

Fill two large wine glasses or two short tumblers with 3 large ice cubes each (total about 6 cubes). Divide the cucumber ribbons between the glasses, tucking them along the inner wall for visual appeal. Strain or pour the mixed wine evenly between the two glasses.

Garnish and finish

Float one thin lime wheel on top of each glass and gently slap a mint sprig between your palms to release aroma, then place it upright as a garnish. Taste and adjust sweetness with more simple syrup (½ teaspoon increments) if desired. Serve immediately.
