Chill glass

Place a stemmed wine glass or large coupe in the freezer for 5–10 minutes, or fill with ice water while preparing the cocktail to ensure the final drink is nicely chilled.

If you don't have lavender syrup on hand, make a quick batch: combine 1/2 cup sugar, 1/2 cup water, and 1 tablespoon dried culinary lavender in a small saucepan. Bring to a simmer, stir until sugar dissolves, steep off heat for 15 minutes, then strain and cool. Refrigerate unused syrup.

Build & Shake

Fill a cocktail shaker halfway with ice.

Add 2 oz Empress gin, 1/2 oz St-Germain, 1/2 oz fresh lemon juice, and 1/2 oz lavender syrup to the shaker.

Dry shake (no ice) for 5 seconds only if you want extra aroma, then add ice and shake vigorously for 10–12 seconds until well chilled (the shaker will frost).

Strain the mixture into the chilled wine glass or coupe filled about two-thirds with fresh ice (or into the glass without ice if you prefer a straight-up spritz).

Top & Garnish

Carefully top the strained cocktail with 2 oz chilled Prosecco and 1 oz chilled seltzer. Pour gently over the back of a spoon if you want a layered effect or pour straight in and give a gentle stir (1–2 turns) to integrate.

Garnish with a fresh lavender sprig and a lemon twist or wheel. Lightly slap the lavender between your palms before garnishing to release its aroma, and run the lemon twist around the rim for added perfume.

Serve immediately. Recommend serving as a single cocktail (see servings) and advise guests to sip slowly to appreciate the floral and citrus interplay.
