Method

Wine

1

Chill bottle

Place the Kistler Chardonnay bottle in a bucket or large container and cover with ice and 50% water (to transfer cold efficiently). Allow to chill for 20–30 minutes until the bottle reaches about 45–50°F (7–10°C). If you prefer a quicker method, wrap the bottle in a damp cloth and place in the freezer for 10–12 minutes—monitor to avoid freezing.

2

Remove the bottle from the ice, wipe condensation from the neck, and open gently. Pour into appropriately sized wine glasses, filling to about one-third full (4–6 ounces / 120–180 ml) to allow the aromatics to concentrate.

3

Serve immediately. If using garnish, float a lemon wheel or thin apple slice on the surface or rest it on the rim; tuck a small thyme sprig into the glass for an aromatic accent.

Prepare garnish

If using a lemon wheel, slice 1/8-inch thick and remove seeds. If using apple, cut a very thin slice to float on the wine. Lightly bruise the thyme sprig between your fingers to release oils before placing it in the glass.
