Prepare and cook the sausage
Pat the sausage dry with paper towel. Heat a skillet (preferably cast iron) over medium heat and add 1 tsp oil. When the oil shimmers, add the sausage. Cook undisturbed for 2–3 minutes to develop color, then roll or turn the link to brown evenly on all sides, about 6–8 minutes total.
Finish cooking with a little water
Reduce heat to medium-low. Add 2 tbsp water to the pan and immediately cover with a lid. Steam for 3–4 minutes until internal temperature reaches 160°F (71°C) for pork sausage or according to package instructions. Remove lid and let any remaining water evaporate, turning sausage once to re-sear for 30–60 seconds. Season with 1/4 tsp salt and 1/8 tsp black pepper while resting for 1 minute.
Toast the roll (optional)
While the sausage rests, split the hoagie roll and, if desired, toast it face-down in the same skillet or under a broiler for 30–60 seconds until lightly crisp and warm.
Assemble the sandwich
Place the cooked sausage in the toasted roll. If using cheese, sprinkle 1/4 cup shredded provolone or mozzarella over the sausage; cover briefly (30–45 seconds) to melt the cheese. Add 1 tbsp hot pepper relish or a few sliced pickled peppers if you like heat, and 1 tsp mustard or ketchup if desired.
Serve
Serve immediately while hot.
