Prep bread and veg

Slice the baguette lengthwise, keeping one edge attached if you prefer a hinge. Lightly toast the bread cut-side down in a 375°F (190°C) oven for 5–7 minutes or in a skillet with 1 tablespoon butter until just golden. Meanwhile thinly slice the tomato and shred the lettuce. Set aside.

Make the spicy mayo: in a small bowl combine mayonnaise, Creole or hot sauce, and Dijon mustard. Taste and adjust heat/salt. Reserve in refrigerator until assembly.

Prepare Oysters & Breading

Inspect and dry oysters

Drain shucked oysters in a colander and gently pat them dry with paper towels to remove excess liquor. Place them in a bowl and refrigerate briefly while you set up the breading station.

Set up breading station

In one shallow bowl whisk the buttermilk and egg together. In a second shallow bowl combine the all-purpose flour, cornmeal, paprika, cayenne, garlic powder, salt, and black pepper. Have a plate or tray ready to hold breaded oysters.

Bread the oysters

Working in batches, dip each oyster into the buttermilk-egg mixture, letting excess drip off, then dredge thoroughly in the flour-cornmeal mixture, pressing gently so the coating adheres. Place breaded oysters on the tray in a single layer. Repeat until all oysters are breaded.

Heat oil

In a heavy skillet or Dutch oven heat 2 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C) or a small breadcrumb sizzles and browns in about 10–15 seconds. Maintain temperature between 330–360°F for frying.

Fry oysters

Fry oysters in batches without overcrowding for 1.5–3 minutes per side (depending on size), turning once with a slotted spoon or tongs so they brown evenly and reach golden crisp. Remove to a wire rack set over a baking sheet or to paper towels to drain. Keep fried oysters warm in a 200°F (95°C) oven while you finish remaining batches.

Finish & Assemble

Butter and toast bread

Spread remaining 1 tablespoon butter (melted) lightly on the cut sides of the toasted baguette. This prevents sogginess and adds flavor.

Assemble po'boy

Spread a generous layer of spicy mayo on both cut sides of the bread. On the bottom half arrange shredded lettuce, then place 4–6 fried oysters (depending on size and appetite) in a single layer. Top oysters with thin tomato slices and pickles. Add additional hot sauce if desired, then close the sandwich and press gently. Cut in half and serve immediately with lemon wedges.

Serve each po'boy hot so the oysters remain crisp. Squeeze lemon over oysters just before eating if desired.
