Method
Crust
Place chocolate sandwich cookies in a food processor and pulse until they become fine crumbs (about 1.5 cups). Alternatively, place in a sealed plastic bag and crush with a rolling pin.
Combine the cookie crumbs, melted butter, and 1 tablespoon granulated sugar in a bowl. Mix until evenly moistened and the texture resembles wet sand.
Press the crumb mixture evenly into the bottom and up the sides of the prepared 9-inch pan using the bottom of a measuring cup or your fingers to compact tightly (about 1/4–1/2 inch thick).
Bake the crust for 8 minutes to set. Remove from oven and allow to cool slightly while you prepare the filling.
Filling
Reduce the oven temperature to 325°F (160°C).
In a heatproof bowl set over (but not touching) simmering water (double boiler) or in short bursts in the microwave, combine 8 ounces semi-sweet chocolate chips, 1 tablespoon butter, and 3 tablespoons hot coffee (or hot water). Stir until the chocolate and butter are fully melted and the mixture is smooth. Set aside to cool for 5 minutes.
Whisk eggs and sugar
In a medium bowl, whisk together 3 room-temperature eggs and 1 cup granulated sugar until the mixture is pale and slightly thickened (about 1–2 minutes).
Pour the chocolate filling into the prepared crust, smoothing the top with a spatula. Tap the pan gently on the counter to remove large air bubbles.
Bake at 325°F (160°C) for 25–30 minutes. The center should be set but still slightly wobbly (it will firm up as it cools). Avoid overbaking to keep a fudgy texture.
Remove the pie from the oven and let it cool to room temperature on a wire rack, then chill in the refrigerator for at least 2 hours (preferably 4 hours or overnight) to fully set.
Whipped Topping & Ganache
Make the ganache: In a small saucepan, heat 1/2 cup heavy cream over medium heat until it just begins to simmer (do not boil). Remove from heat and pour over 4 ounces semi-sweet chocolate chips in a heatproof bowl. Let sit 1 minute, then stir until smooth and glossy. Allow ganache to cool slightly until thickened but still pourable.
Pour the ganache over the chilled pie, starting in the center and spreading outward, allowing a little to drip down the sides for a rustic look. Return the pie to the refrigerator for 10–15 minutes to set the ganache.
Pipe or spread the whipped cream over the set ganache. For a classic Mississippi Mud Pie look, leave the center exposed or create peaks and swirls with a spatula.
Garnish & Serve
Sprinkle chopped pecans or walnuts around the edges or over the whipped topping and add chocolate shavings or a light dusting of cocoa powder.
Let the assembled pie rest in the refrigerator for 15–30 minutes to allow layers to settle. Slice with a sharp knife dipped in hot water and wiped dry between cuts for clean slices.
Serve chilled. Store leftovers well wrapped in the refrigerator for up to 4 days.
