Mix

In a small bowl, combine the ground beef, breadcrumbs, milk, salt, and black pepper. Mix gently with your hands or a fork until just combined—do not overwork the meat, which makes patties tough.

Form patties

Divide the mixture into 2 equal portions (about 4 ounces each). Lightly shape each portion into a round patty about 3 to 3½ inches wide and roughly ½ inch thick. Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.

Cook

Heat a nonstick skillet or cast-iron pan over medium heat. Add the 1 teaspoon butter and swirl to coat the pan. When the butter is foaming, add the patties, leaving space between them. Cook 3 to 4 minutes on the first side without pressing, until the bottom is nicely browned. Flip and cook 2 to 3 minutes on the second side for medium (adjust time ±1 minute for desired doneness). In the last 30 seconds of cooking, place one slice of American cheese on each patty and cover the pan with a lid or a sheet pan to melt the cheese quickly.

Rest

Remove the patties to a plate and let them rest 2 minutes so juices redistribute and cheese sets slightly.

Toast buns

While the patties rest (or before cooking if preferred), spread the softened butter on the cut sides of the 2 mini buns. Place them buttered-side down in the same skillet over low-medium heat and toast 30–60 seconds until golden and warm. Remove from the pan.

Sauce and build

Spread 1 teaspoon ketchup and ½ teaspoon mustard on the bottom half of each toasted bun. Place a lettuce leaf (if using) on the bottom, then set a cheeseburger patty on top. Add 2 pickle slices (or more to taste) and cover with the top bun.

Serve

Serve warm with a side appropriate for kids (apple slices, carrot sticks, or small fries). Offer extra ketchup on the side if desired.
