Prepare bread and cheese

Lay out 4 slices of bread on a clean work surface. If using sliced cheddar, place 2 slices of cheese on two of the bread slices, centering to leave a small border so cheese won’t ooze out while cooking. If using shredded cheese, sprinkle about 1/2 cup shredded cheese evenly on each of the two bread slices.

Assemble sandwiches

If using optional add-ins (tomato or ham), place them on top of the cheese now. Top each assembled slice with the remaining bread slice to form 2 sandwiches. Optional: spread about 1 teaspoon of mayonnaise on the inside of one bread slice before adding cheese for a slightly tangy creamier interior.

Butter the bread

Spread about 1 tablespoon of softened butter evenly over the outside face of each sandwich (the side that will contact the pan). Ensure even coverage to encourage golden browning. If butter is too firm, warm briefly in a microwave (5–10 seconds) to soften but not melt.

Cook the sandwiches

Heat a nonstick skillet or griddle over medium-low heat (about 275–325°F / 135–160°C if using an infrared thermometer). Place sandwiches butter-side-down in the skillet. Cook gently for 3–4 minutes, checking after 2–3 minutes to ensure the bread is turning golden brown but not burning. When golden, spread the remaining butter (about 1 tablespoon total left, so 1/2 tablespoon per top if desired) on the top side of each sandwich, then flip carefully using a spatula. Cook the second side 3–4 minutes until the bread is golden brown and the cheese is fully melted. If cheese needs extra melting, cover the pan with a lid for 30–60 seconds after flipping.

Rest and slice

Remove sandwiches from the skillet to a cutting board and let rest 1 minute (this keeps melted cheese from spilling). Cut each sandwich diagonally into two triangles (or into strips for younger children) and transfer to serving plates.

Optional add-ins & serving

If serving with ketchup or applesauce, place 2 teaspoons per child in a small dipping dish. For tomato or ham add-ins, make sure tomato slices are thin (about 1–2mm) to avoid making the sandwich soggy; pat with a paper towel if especially juicy. If using ham, warm it briefly in the skillet for 10–15 seconds before adding to the sandwich for a warmer filling.
