Prepare the fish
Pat the catfish fillets dry with paper towels. Cut into kid-friendly portions about 3–4 inches long and roughly 1/2–3/4 inch thick so they cook evenly and are easy for small hands to hold.
Marinate briefly
Place the cut fillets in a shallow bowl and pour the buttermilk over them, turning to coat. Let sit 10 minutes at room temperature (this tenderizes the fish and helps the coating stick).
Make the coating mix
In a shallow dish or pie plate, whisk together the flour, cornmeal, breadcrumbs (if using), salt, black pepper, paprika, and garlic powder until evenly combined.
Frying & Finish
Heat the oil
Pour oil into a heavy skillet (cast-iron or stainless works well) so it is about 1/4 inch deep. Heat over medium heat until oil reaches about 350°F (175°C) or until a pinch of coating sizzles gently when dropped in. If you don't have a thermometer, test with a small piece of bread: it should brown in roughly 60–90 seconds.
Coat the fillets
One at a time, lift a fillet from the buttermilk, letting excess drip back into the bowl, then press both sides into the coating mixture until well covered. Shake gently to remove loose excess. Place coated fillets on a wire rack or plate while you finish coating the rest.
Fry the catfish
Carefully add 2–3 fillets to the hot oil without crowding the pan. Fry 2–3 minutes per side, until the coating is golden brown and an instant-read thermometer inserted into the thickest part reads 145°F (63°C) or the fish flakes easily with a fork. Adjust heat as needed so the exterior browns without burning (lower the heat if coating browns too fast).
