Crispy Fried Oysters
Prep oysters
Rinse shucked oysters gently in cold water and drain on paper towels. Pat each oyster dry — removing excess surface moisture helps the coating adhere and fry crisply.
Brine/soak
Place the dried oysters in a shallow bowl and pour the buttermilk over them. Toss gently to coat and let sit 10–15 minutes. This tenderizes and flavors the oysters and helps the batter cling.
Set up dredging station
In one shallow bowl whisk the egg lightly. In a second bowl combine flour, cornmeal, panko, salt, black pepper, smoked paprika, and garlic powder. Place a tray or sheet of parchment to receive coated oysters.
Coat oysters
One by one remove oysters from the buttermilk, letting excess drip back into the bowl. Dip into the whisked egg (if using) or directly into the flour mixture, pressing to adhere the coating. For extra crunch: wet-dry-wet-dry: flour mixture → egg → flour/panko mixture. Place coated oysters on the tray, evenly spaced.
Heat oil
In a deep skillet or Dutch oven, pour enough vegetable oil to reach about 1½ to 2 inches up the sides (about 3–4 cups depending on pan). Heat over medium-high to reach 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of flour into the oil — it should sizzle and rise immediately.
Fry oysters
Working in batches of 3–4 (do not overcrowd), carefully lower coated oysters into the hot oil with a slotted spoon or spider. Fry 2–3 minutes, turning once, until golden brown and crisp. Internal oyster should be just cooked — do not overcook or they'll become rubbery.
Drain and keep warm
Remove oysters with a slotted spoon and transfer to a wire rack set over a baking sheet or paper towels to drain. Keep warm in a 200°F (95°C) oven while you fry remaining batches.
Secret Sauce
While oysters rest or fry, whisk together mayonnaise, ketchup, Dijon mustard, hot sauce, Worcestershire sauce, pickle juice (or lemon juice), smoked paprika, sugar, salt, and black pepper in a small bowl until smooth and emulsified. Taste and adjust heat or acidity. Chill in refrigerator if preparing ahead.
Tomato & Pressed Assembly
Prepare tomato
Slice the ripe tomato into 1/4-inch thick rounds. Lightly season both sides with the indicated salt and black pepper. If you prefer less moisture on the final presentation, gently blot the slices with a paper towel.
Toast or prepare bread (optional pressed style)
If making a pressed presentation: lightly butter the bread slices and toast in a skillet until golden, or leave untoasted if you want soft pressed bread. Place one slice on a cutting board, layer tomato slices, then arrange 4–6 fried oysters depending on size. Top with a small spoonful of Secret Sauce and microgreens. Place second slice of bread on top and press gently (use a heavy pan or a sandwich press) for 30–60 seconds to compress and meld flavors. Trim edges if desired and cut in half.
Plating without bread
For an open presentation: place the seasoned tomato slices on a serving plate, spoon a thin smear of Secret Sauce onto each tomato round, top with 2–3 fried oysters, and finish with a small dollop of sauce and microgreens. Serve lemon wedges on the side.
Final garnish
Sprinkle a light pinch of smoked paprika over the finished plate and serve immediately while oysters are hot and crisp.
