Burger Patties
Form and season patties
Divide the ground beef into two equal portions (about 8 oz each). Gently form each portion into a loose ball then flatten to a patty about 3.5–4 inches wide and roughly 3/4 inch thick. Make a shallow dimple in the center of each patty with your thumb to reduce puffing while cooking. Season both sides generously with kosher salt and freshly ground black pepper.
Cook patties
Heat a heavy skillet or griddle over medium-high heat until very hot (about 3–4 minutes). Add 1 tablespoon neutral oil and spread. Place patties on the hot surface and cook undisturbed 3 minutes to develop a crust. Flip once and cook another 2 minutes for medium (adjust 1–2 minutes for desired doneness). In the last 30 seconds of cooking, place one slice of American cheese on each patty and cover the pan briefly with a lid or tent with foil to melt the cheese.
Buns & Assembly
Spread mayo and assemble
Spread 1 tablespoon mayonnaise on the top bun and 1 tablespoon on the bottom bun. On the bottom bun place shredded lettuce (or leaf), then the cheesy patty. Top the patty with tomato slice and 3 pickle slices. Place the top bun with mayo on the sandwich and serve immediately.
