Prepare the Steak

Marinate the flank steak with olive oil, salt, and black pepper for at least 30 minutes.

Grill the Steak

Preheat your wood grill. Grill the marinated steak for about 5-7 minutes on each side, or until it reaches your desired doneness. Let it rest for 5 minutes, then slice thinly.

Prepare the Salsa

Roast the pasilla and ancho chiles over the grill until charred. Remove seeds and stems, then blend with tomatoes, onion, lime juice, and salt to taste.

Assemble the Tacos

Warm the corn tortillas on the grill for about 1 minute on each side. Fill each tortilla with sliced steak, top with salpicon (shredded beef, cabbage, and cilantro), and drizzle with the chile salsa.

Serve the tacos immediately with lime wedges on the side.
