Marinate the Chicken

In a bowl, mix the white wine, olive oil, lemon juice, minced garlic, salt, and black pepper. Add the chicken breasts, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour or up to overnight.

Prepare the Mushrooms

Clean and slice the mushrooms. In a skillet, heat a tablespoon of olive oil over medium heat. Add the mushrooms and sauté until golden brown, about 5-7 minutes. Season with salt and pepper, then set aside.

Fry the Capers

In the same skillet, add another tablespoon of olive oil. Once hot, add the capers and fry until they are crispy, about 2-3 minutes. Remove from the skillet and drain on paper towels.

Grill the Chicken

Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes per side or until cooked through and juices run clear. Let them rest for a few minutes.

Serve

Slice the grilled chicken and arrange on a serving platter. Top with sautéed mushrooms, fried capers, and sprinkle with fresh parsley before serving.
