Prepare the Veracruz Sauce

In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

Add minced garlic and cook for another minute until fragrant. Stir in diced tomatoes, green olives, capers, cilantro, lime juice, oregano, and red chili flakes. Simmer for 10-15 minutes until the sauce thickens slightly. Set aside.

Grill the Red Snapper

Preheat the grill to medium-high heat. Brush both sides of the red snapper fillets with olive oil and season with salt and black pepper.

Place the fillets on the grill and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Serve

Plate the grilled red snapper and generously spoon the Veracruz sauce over the top. Garnish with additional cilantro if desired.
