Gelato Preparation

Prepare the Base

In a medium saucepan, combine milk and heavy cream. Heat over medium heat until just starting to simmer. Do not let it boil.

Melt Chocolate (if using dark chocolate)

If using dark chocolate, chop it into small pieces and add it to the milk and cream mixture. Stir until melted and smooth. If using vanilla bean, split the bean, scrape the seeds and add both the seeds and the pod to the mixture.

Whisk Egg Yolks

In a separate bowl, whisk together the egg yolks and granulated sugar until pale and thick.

Combine Mixtures

Slowly add the warm milk and cream mixture to the egg yolk mixture, whisking constantly to temper the eggs. Pour the combined mixture back into the saucepan.

Heat the Mixture

Cook over medium-low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Remove from heat and strain through a fine-mesh sieve to remove any lumps or the vanilla pod.

Chill

Let the mixture cool to room temperature, then refrigerate until completely chilled, at least 4 hours or overnight.

Churn the Gelato

Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze

Transfer the gelato to an airtight container and freeze for at least 2 hours until firm.

Serve

Scoop and serve your homemade gelato in bowls or cones.
