Prepare the Sauce
In a medium saucepan over medium heat, combine the heavy cream, Dijon mustard, chopped tarragon, and chopped chives. Stir well and let it simmer for about 5 minutes until it thickens slightly. Season with salt and black pepper to taste. Remove from heat and set aside.
Cook the Salmon
In a large skillet, heat the olive oil over medium-high heat. Season the Ora King Salmon fillets with salt and black pepper on both sides. Place the salmon fillets skin-side down in the skillet and cook for about 4-5 minutes until the skin is crispy. Carefully flip the fillets and cook for an additional 3-4 minutes until the salmon is just cooked through and flakes easily.
