Prepare Gelatin
In a small bowl, sprinkle the gelatin powder over the water and let it sit for about 5 minutes to soften.

Heat Cream Mixture
In a saucepan over medium heat, combine the heavy cream, whole milk, sugar, and vanilla extract. Stir until the sugar dissolves and the mixture is hot but not boiling.

Dissolve Gelatin
Remove the saucepan from heat. Add the softened gelatin mixture and stir until completely dissolved.

Pour into Molds
Pour the mixture into individual serving cups or molds. Refrigerate for at least 4 hours or until set.

Prepare Berry Compote
In a small saucepan, combine your choice of mixed berries (like strawberries, blueberries, or raspberries) with a tablespoon of sugar and a splash of water. Cook over medium heat until berries are soft and the mixture is syrupy.

Once the panna cotta is set, top with the berry compote before serving.
