Prepare watermelon puree
Cut about 2 cups of seedless watermelon into chunks. Place the chunks in a blender and puree until smooth (about 30–45 seconds). Strain the puree through a fine-mesh sieve into a bowl to remove pulp and excess fiber, pressing with a spoon to extract as much juice as possible. You should end up with roughly 3–4 oz of strained puree for one cocktail. Chill slightly if desired.
Prepare glass (optional sugared rim)
If you want a sugared rim, run the lemon wedge around the rim of a chilled martini or coupe glass. Place the coarse sugar on a small plate and dip the moistened rim into the sugar, rotating to coat evenly. Set the glass aside.
Muddle mint
In a cocktail shaker, add the fresh mint leaves and the simple syrup. Gently muddle the mint about 6–8 times — just enough to release the aromatic oils; avoid shredding the leaves into tiny pieces.
Combine ingredients
Add the chilled watermelon puree, Tito's Vodka (2 oz), and fresh lemon juice (0.5 oz) into the shaker with the muddled mint. Fill the shaker with ice (about 1 cup) to chill and dilute correctly.
Shake
Secure the shaker lid and shake vigorously for 12–15 seconds until the outside of the shaker feels very cold and slightly frosty. This chills the drink and integrates the flavors.
Double strain and serve
Open the shaker and using a hawthorne or regular strainer and a fine-mesh strainer, pour the cocktail into the prepared chilled martini/coupe glass to remove ice shards and mint bits.
Garnish
Garnish with a small watermelon wedge on the rim or a fresh mint sprig placed in the drink. Serve immediately.
