Chill and prepare glass

Place a large wine glass or rocks glass in the freezer for 5 minutes or fill with ice water to chill while you prepare ingredients.

Add ice

Discard the chilling ice/water (if used) and fill the chilled glass with large ice cubes about three-quarters full (approximately 1 cup of ice).

Build the spritz

Pour 2 tablespoons Aperol over the ice, then add 1 tablespoon Rockey’s Botanical Liqueur and 1/2 ounce fresh lime juice. Gently stir once to combine the liqueurs and lime juice.

Top with sparkling

Slowly pour 3 ounces chilled prosecco into the glass to preserve carbonation. If you prefer a slightly lighter, fizzier finish, add 1/2 ounce chilled club soda on top. Give the drink one gentle stir (1–2 rotations) to marry the ingredients without flattening the bubbles.

Garnish & Finish

Discard any excess water from the glass rim. Float or clip a lime wheel on the rim or drop it into the drink. Tuck a small sprig of thyme or rosemary between the lime wheel and the glass rim for an aromatic finish. Serve immediately.
