Make honey syrup

Place the honey and hot water in a small heatproof bowl or jar. Stir until fully combined and smooth to create a pourable honey syrup (approx. 1:1 by volume). Allow to cool to room temperature (about 5 minutes).

Mix peach base

In a large pitcher, combine the peach nectar (2 cups), fresh lemon juice (1/2 cup) and 3 tablespoons of the prepared honey syrup. Stir well for about 20–30 seconds until evenly combined and slightly frothy. Taste and adjust sweetness: add up to 1 more tablespoon honey syrup if you prefer sweeter.

Chill and prepare glasses

Fill four serving glasses with ice (about 1/2 cup ice per glass) or place the pitcher in the refrigerator for 10 minutes if you prefer a cooler mixture before adding carbonation.

Add sparkling water

Just before serving, gently stir the peach-lemon base once more and slowly pour in the chilled sparkling water (2 cups) to retain effervescence. Stir very gently once (5–6 slow strokes) to combine. Avoid vigorous stirring to keep bubbles.

Serve

Divide the spritzer among the ice-filled glasses. Garnish each glass with a fresh peach slice, a lemon wheel, and a sprig of mint if using. Serve immediately so the drink remains fizzy.

Notes

For a smoother texture, strain the peach nectar through a fine mesh if it contains pulp. To make this into a cocktail, add 2–3 oz (60–90 ml) vodka or light rum per serving before adding sparkling water.
