Method

Prepare Glass

Chill a rocks or coupe glass in freezer for 5–10 minutes or fill with ice water while you prepare the cocktail.

On a small plate, combine Tajin and kosher salt (if using) and spread into an even layer for rimming.

Rub the lime wedge around the rim of the chilled glass, then dip the rim into the Tajin mixture to coat evenly. Set glass aside.

Mix Cocktail

Add ingredients

In a cocktail shaker, add 2 oz Corazon Reposado tequila, 1 oz passion fruit puree, 1 oz fresh lime juice, 0.5 oz simple syrup, 0.5 oz orange liqueur (if using), and 2 dashes habanero bitters.

Add ice

Fill the shaker with about 6 ice cubes so the liquid will chill and dilute properly.

Shake

Shake vigorously for 12–15 seconds until the shaker is very cold to the touch and properly diluted.

Fine strain

Discard the ice/water from the chilled glass. Fine-strain the cocktail into the prepared glass over fresh ice (for rocks) or without ice (for coupe), using a Hawthorne and/or fine mesh strainer to remove fruit pulp and small ice shards.

Garnish & Finish

If using fresh passion fruit, optionally float half a teaspoon of pulp/seeds on top or place a small passion fruit wheel on the rim.

Garnish with the reserved lime wedge on the rim and serve immediately.

Taste carefully — the habanero bitters add heat. Advise guests to sip slowly and enjoy the balance of sweet, tart, smoky tequila and spicy finish.
