Method

Syrup

1

Make a quick turbinado syrup by combining turbinado sugar and hot water in a small container. Stir until the sugar is fully dissolved and the mixture is clear. Allow to cool to room temperature before using.

Cocktail Build

2

Prepare glass

Select a chilled rocks glass (old fashioned glass). If desired, chill the glass briefly in the freezer or by filling with ice water for a minute, then discard the water.

3

Add syrup and bitters

Place the prepared rocks glass on a bar towel. Add 1 tablespoon of the cooled turbinado syrup to the glass. Add 3 dashes of Angostura bitters and 2 dashes of orange bitters directly on top of the syrup.

4

Muddle cherry

Add the filthy black cherry to the glass and gently muddle once or twice to release a little cherry juice and aromatics, but avoid pulverizing the cherry—just enough to combine flavors with the syrup and bitters.

5

Add bourbon and ice

Pour 2 oz Maker's Mark bourbon into the glass. Add one large ice cube (or enough large cubes to fill most of the glass).

6

Stir

Using a bar spoon, stir the drink gently for about 20–30 seconds (15–20 full revolutions) until the cocktail is well chilled and slightly diluted. Scrape the sides and bottom of the glass as you stir so syrup and bitters are fully integrated.

7

Express orange peel

Hold the orange peel over the glass with the outside (orange) side facing down. Give the peel a firm squeeze to express the oils across the surface of the drink, then run the peel around the rim of the glass to deposit oils and aroma.

8

Garnish by dropping the express-juiced orange peel into the glass alongside the muddled filthy black cherry. Serve immediately.
