Salumi & Formaggi (choose 3 total)
Select and portion
Choose any combination of three items from the salumi and formaggi list (for example: prosciutto, soppressata and pecorino). Portion approximately the listed amounts so each guest receives a balanced selection (roughly 3–4 thin slices of each salume and 40–60 g of each cheese depending on firmness).
Bring cheeses to temperature
Remove cheeses from refrigeration 20–30 minutes before serving to allow flavors and textures to open. Soft cheeses (taleggio) should be slightly cool but pliable; aged cheeses (pecorino, parmigiano) should be at room temperature for optimal flavor.
Prepare cheese pieces
For hard cheeses (Parmigiano-Reggiano), break into shards with a knife. For semi-hard (Pecorino), cut into thin wedges. For soft cheese (Taleggio), slice into 1 cm pieces or leave as a small wedge so guests can spread.
Arrange salumi
Lay cured meat slices in loose ribbons or gentle folds on the board to make them easy to pick up and to showcase texture. Cluster each type separately so guests can easily identify and sample.

Toast bread
Brush bread slices lightly with 1 tbs extra-virgin olive oil and, if desired, a light sprinkle of cracked black pepper. Toast or grill over medium-high heat until crisp and golden (2–3 minutes per side) and set aside to cool slightly.
Prepare olives and pickles
Place marinated olives in a small bowl. Drain cornichons or pickled vegetables onto a paper towel and place in a small ramekin so they don't make the board soggy.

Assemble the Piccola Selezione
On a wooden board or large plate, arrange the three chosen salumi and/or formaggi in separate clusters. Add toasted bread slices near the cheeses, place olives and pickles in small bowls, and set the honey dish close to the aged cheese cluster. Scatter microgreens or small sprigs of rosemary for color and aroma. Add a lemon wedge beside the olives for those who enjoy a citrus lift.
Final touches
Lightly crack black pepper over the soft cheese if desired. Label the selections if serving to guests. Offer small forks or toothpicks for the pickles and olives and a small cheese knife for each cheese type.
Serve
Serve immediately so breads remain crisp and cheeses are at their optimal temperature. Encourage guests to taste contrasts: creamy vs. aged cheese, salty salumi vs. sweet honey or acidic pickles.
