Dry shake
Add Amaro Montenegro, fresh lemon juice, turbinado simple syrup, and the egg white (if using) to a cocktail shaker without ice. Dry shake vigorously for 15–20 seconds to emulsify and build a silky foam.
Wet shake
Add large ice to the shaker (about 3–4 pieces) and shake hard for another 10–15 seconds until the shaker is well chilled and slightly frosty on the outside.
Strain
Discard ice from the chilled glass if you used it to chill. Double-strain the cocktail into the chilled Old Fashioned glass over one large ice cube or a few fresh ice cubes to keep the drink cold without over-diluting.
Float Chianti
Using the back of a bar spoon held just above the surface of the drink, slowly pour 0.5 oz Chianti so it floats on top of the foam. Pour gently to keep a distinct wine layer; the red will create an attractive float and aroma.
Garnish and serve
Express a lemon twist over the surface to release oils, then wipe the rim and drop the twist into the drink or place it on the edge. Serve immediately and advise the drinker to sip so they can experience the wine float, foam, and Montenegro together.
