Preparation & assembly
Prep the rosemary
Lightly slap the rosemary sprig between your palms (or between two hands) for 2–3 seconds to release the aromatic oils. Set aside one sprig for garnish.
Chill glass and add ice
Fill a 12-ounce copper mule mug or highball glass with cubed ice to chill while you prepare the cocktail. Discard any excess water after a minute if the ice has melted significantly.
Build the cocktail
Discard any melted water and add 2 oz Tito's Vodka, 0.5 oz limoncello, and 0.5 oz fresh lime juice directly into the chilled glass over fresh ice.
Top with ginger beer
Gently top the spirit mixture with about 4 oz chilled ginger beer. Pour slowly over the back of a bar spoon if you want to retain a layered look; otherwise simply pour and give one gentle stir (1–2 turns) to integrate.
