Prepare Vegetables
Trim and cut
Wash all vegetables thoroughly. Cut cauliflower into small florets (about 1" pieces). Peel and cut carrots into sticks about 2-3" long. Slice bell peppers into 1/2" strips. Cut celery into 1/2" slices. Slice wax/banana peppers into rings. Peel pearl onions or shallots (blanch 30 seconds in boiling water then shock in ice water to remove skins if needed).
Blanch hardy vegetables: bring a large pot of water to a rolling boil. Add cauliflower florets and carrots and blanch 1 minute. Immediately transfer to a bowl of ice water to stop cooking; drain thoroughly. This step softens the vegetables slightly so they absorb brine but remain crisp.
Make Brine
In a medium saucepan combine water (2 cups), white wine vinegar (2 cups), optional distilled white vinegar (1/2 cup), granulated sugar (2 tbs) and kosher salt (2 tbs). Add black peppercorns (1 tbs), mustard seeds (1 tbs), dried oregano (2 tsp), dried thyme (1 tsp), red pepper flakes (1 tsp), smashed garlic cloves (4), and bay leaves (2).
Bring the mixture to a simmer over medium heat, stirring to dissolve the sugar and salt. Once simmering, reduce heat and maintain a gentle simmer for 5 minutes to bloom the spices and meld flavors. Remove from heat and let sit 5 minutes to slightly cool but remain hot.
Pack Jars
Arrange vegetables tightly but without crushing into the sterilized jars: divide cauliflower, carrots, peppers, celery and onions between the two 1-quart jars, layering different colors for an attractive presentation. Tuck smashed garlic cloves and a few peppercorns, mustard seeds and 1 bay leaf into each jar so spices are distributed.
If you like more heat, sprinkle additional red pepper flakes into jars to taste.
Pour Brine & Seal
Ladle the hot brine over the packed vegetables, filling jars and leaving about 1/2" headspace. Use a clean spatula or chopstick to release trapped air bubbles; add more brine if necessary to maintain headspace.
Finish & Rest
Once jars are cool, optionally pour 2 tablespoons extra-virgin olive oil on top of each jar to add richness and help seal. Refrigerate for at least 48 hours before eating; optimal flavor after 5–7 days. Giardiniera keeps in the refrigerator for up to 4 weeks (longer if properly canned).
Serve chilled or at room temperature as an antipasto, sandwich topping, or condiment.
