Method
Build & Serve
Chill glass and ingredients
Place a stemmed wine glass or large goblet in the freezer for 5–10 minutes or fill it with ice to chill. Ensure prosecco and soda water are well chilled before assembling.
Add ice to glass
Fill the chilled glass about three-quarters full with fresh ice cubes (approximately 1 cup). This keeps the drink cold without diluting too quickly.
Pour Aperol
Measure and pour 3 tablespoons (about 1.5 oz) of Aperol over the ice. Pouring first helps the layers settle and makes mixing gentle.
Top with soda water
Add 1 ounce of chilled carbonated water to top the drink. Adjust by a splash more or less to taste; the classic ratio is roughly 3 Aperol : 3 prosecco : 1 soda.
Stir gently
Give the drink one or two gentle stirs with a bar spoon to integrate the ingredients without flattening the prosecco.
Garnish and serve
Garnish with one fresh orange slice placed on the rim or dropped into the glass. Serve immediately while the drink is cold and fizzy.
