Chill glass and ingredients
Place a champagne flute (or coupe) in the freezer for 5–10 minutes or fill it with ice water while preparing the other elements. Ensure the prosecco and peach nectar are well chilled.
Prepare peach nectar
If using commercial peach nectar, stir or gently shake the bottle to recombine any settled solids. If you prefer a fresher fruit-forward version and have ripe peaches, you can blend 1 medium peeled peach with 3 oz strained water and a tiny pinch of sugar then strain to yield approximately 3 oz of nectar — adjust sweetness to taste.
Build the Bellini
Remove ice from the chilled glass if used. Pour 3 oz peach nectar into the flute. If using the optional lemon juice for brightness, add 1/4 tsp now and gently swirl to combine.
Top with prosecco
Slowly pour 3 oz well-chilled prosecco down the side of the glass to preserve bubbles and help with gentle mixing. Pouring slowly minimizes foaming and preserves effervescence.
Serve
Serve immediately while the drink is chilled and effervescent. Enjoy responsibly.
