Cocktail Assembly
Prepare glass
Select a large wine glass or stemmed balloon glass. Fill the glass with one large ice cube or enough large cubes to almost fill the bowl to keep dilution slow.
Build base
Pour 1.5 oz Aperitivo over the ice. Add 1.0 oz fresh grapefruit juice directly on top of the Aperitivo to introduce brightness and slight acidity.
Top with bubbles
Slowly add 3.0 oz chilled Prosecco. Pour gently down the side of the glass or over the back of a spoon to preserve effervescence.
Add ginger beer finish
Float 1.0 oz chilled ginger beer on top (pour gently). This adds a spicy, effervescent layer. Do not stir vigorously — a gentle swirl once or twice is fine to integrate flavors while keeping carbonation.
Garnish & Serve
Express a grapefruit peel over the glass to release oils, then drop a grapefruit wheel or twist into the drink. Optionally, slap a mint sprig between your palms and rest it against the rim for an aromatic note.
Serve immediately with a short straw or without, so the drinker experiences the layered effervescence. Advise sipping slowly to enjoy changing flavors as the spritz opens.
