Graham Cracker Crust

Preheat and prep pan

Preheat oven to 350°F (175°C). Lightly butter a 9-inch (23 cm) pie dish or spray with nonstick spray.

Melt the unsalted butter in a small saucepan over low heat or in the microwave in 20-second bursts until liquefied.

In a medium bowl combine graham cracker crumbs, granulated sugar and 1/8 tsp fine salt. Pour melted butter over the crumb mixture and stir until all crumbs are moistened and the mixture holds together when pressed.

Press the crumb mixture evenly into the bottom and up the sides of the prepared 9-inch pie dish, using the bottom of a measuring cup to compact the crust firmly and create a neat edge.

Bake crust in the preheated oven for 8–10 minutes, or until set and fragrant. Remove from oven and let cool on a wire rack while you make the filling. Reduce oven temperature to 325°F (160°C) if you plan to bake the assembled pie briefly (optional step below).

Key Lime Filling

Zest 2 key limes (or regular limes if keys unavailable) to yield about 2 tablespoons zest. Then juice enough limes to measure 1/2 cup juice. Strain juice if you prefer a smoother filling.

In a large mixing bowl, whisk together 1 1/2 cups sweetened condensed milk, 1/2 cup key lime juice, 2 tablespoons key lime zest, 1/4 cup heavy cream, 4 large egg yolks, 1/2 tsp vanilla extract and 1/8 tsp fine salt until smooth and fully combined. Whisk vigorously for about 1–2 minutes to emulsify.

Optional – for a silkier, slightly firmer set: pass the filling through a fine-mesh sieve into a clean bowl to remove any zest fibers and fully combine.

Pour the filling into the cooled graham cracker crust and smooth the top with a spatula.

Baking options (choose one): - No-bake/stovetop-cooked set: Chill the assembled pie in the refrigerator for at least 4 hours, preferably overnight, until fully set. - Baked set (slightly firmer, classic texture): Place the pie on a baking sheet and bake at 325°F (160°C) for 12–15 minutes, until the filling is just set in the center (it will still have a slight jiggle). Remove and cool to room temperature, then chill at least 2 hours before serving.

Whipped Cream Topping

Chill a medium mixing bowl and whisk or beaters in the freezer for 10 minutes to help the heavy cream whip faster (optional but recommended).

Pour 1 cup heavy cream into the chilled bowl. Add 2 tablespoons powdered sugar and 1/2 tsp vanilla extract.

Whip by hand with a whisk or with an electric mixer on medium-high speed until soft to medium peaks form, about 2–3 minutes. Do not overbeat; you want a billowy topping that still spreads easily.

Spread whipped cream over the chilled (or cooled-and-chilled) pie just before serving, or pipe decorative rosettes around the edge and leave the center bare if preferred.

Garnish & Serve

Finish the pie by sprinkling the extra 1 tablespoon lime zest over the whipped cream or the exposed filling. Arrange 4 thin key lime slices or wedges on top for decoration.

For best flavor, chill the pie at least 1 hour after adding the whipped cream so flavors meld. Slice with a sharp, hot knife (dip in hot water and wipe dry between cuts) for clean slices.
