Prepare the Ingredients

Wash the spinach thoroughly and chop it coarsely. Dice the tomato and crumble the feta cheese.

Beat the Eggs

In a bowl, crack the eggs, add a pinch of salt and black pepper, and whisk until well combined.

Cook the Spinach and Tomato

Heat olive oil in a non-stick skillet over medium heat. Add the chopped spinach and diced tomato, cooking until the spinach wilts, about 2-3 minutes.

Add the Eggs

Pour the beaten eggs over the spinach and tomato mixture in the skillet, tilting the pan to spread the eggs evenly. Cook for about 3-4 minutes, or until the edges start to set.

Add the Feta

Sprinkle the crumbled feta cheese evenly over one half of the omelette. Let it cook for another minute until the eggs are set but the top is still slightly runny.

Fold and Serve

Carefully fold the omelette in half over the feta cheese, slide it onto a plate, and serve hot.
