Prepare glass & build

    Chill and add ice

    Place a large wine glass or highball in the freezer for 5 minutes or fill with ice to chill. Discard chilling ice, then fill the glass halfway with fresh cubed ice (about 1 cup).

    Muddle strawberries (optional)

    If using fresh strawberries for brightness, place 2 sliced strawberries in a mixing glass and lightly muddle once or twice to release juices but not completely purée. If using only strawberry syrup, skip this step.

    Combine spirits

    Add 1.5 oz gin, 0.75 oz Aperol, 0.5 oz fresh strawberry syrup, and 0.25 oz maraschino cherry liqueur (or cherry syrup) into the mixing glass with the muddled strawberries. Add 4–6 ice cubes to the mixing glass.

    Stir and strain

    Stir the mixture for 10–12 seconds to chill and slightly dilute. Strain the liquid into the prepared chilled glass over the fresh ice.

Top and finish

    Add bubbles

    Slowly pour 3 oz chilled prosecco into the glass to preserve carbonation. Gently stir once with a bar spoon (1–2 turns) to integrate.

    Add grapefruit soda

    Float or gently pour 1 oz grapefruit soda on top to add a bright, bitter-sweet lift. Do not over-stir to keep effervescence.

    Garnish

    Thread a maraschino cherry and a thin grapefruit twist onto a cocktail pick and rest it across the rim. Drop the muddled strawberry slices into the drink for aroma and visual appeal.

    Serve

    Serve immediately with a short straw. Recommend serving as a signature cocktail at brunch or aperitivo.
