Matcha yogurt base

Method

Matcha yogurt base

  1. 1

    Bloom matcha

Sift the matcha powder into a small bowl or cup to remove any clumps. Add the hot water (about 2 tablespoons) and whisk briskly in a quick zigzag motion until the matcha is smooth, frothy, and fully dissolved with no lumps (about 15–30 seconds).

  2. 2

    Sweeten and flavor

Stir the honey or maple syrup, vanilla extract (if using), and a pinch of sea salt into the whisked matcha until combined.

  3. 3

    Combine with yogurt

Place the Greek yogurt in a medium mixing bowl. Add the milk to loosen the yogurt slightly (this yields a creamier, spoonable texture). Pour the matcha mixture over the yogurt. Using a flexible spatula or whisk, fold and stir the ingredients together until the yogurt is evenly tinted pale green and smooth. Taste and adjust sweetness, adding up to 1 more teaspoon of sweetener if desired.

  4. 4

    Chill (optional)

Cover and refrigerate for 10–30 minutes to let flavors meld and the texture firm slightly. You may serve immediately if preferred.

Toppings & serving

  1. 5

Divide the matcha yogurt between two bowls (about 1 cup each). Top each serving with the fresh berries, a sprinkle of granola, and toasted sesame seeds or chopped nuts. Drizzle additional honey or maple syrup on top if you like.

  2. 6

Serve immediately. Leftover matcha yogurt can be stored in an airtight container in the refrigerator for up to 3 days; stir before serving as liquids may separate slightly.
