    Prepare the shaker

    Add tequila blanco, Hypnotic, St. Germain, fresh lime juice, and simple syrup to a cocktail shaker.

    Add foam base

    Add Fee Foam (preferred) or aquafaba. If using egg white instead of aquafaba/Fee Foam, add the egg white now.

    Dry shake

    Seal the shaker and dry shake (no ice) vigorously for 15–20 seconds to emulsify the foam into the cocktail.

    Wet shake

    Open the shaker, add plenty of ice (about 1 cup), reseal and shake hard for 12–15 seconds until the outside of the shaker is very cold.

    Double strain

    Double-strain the cocktail into a chilled coupe or Nick & Nora glass to remove ice shards and ensure a silky texture.

    Blue curaçao float

    Using the back of a bar spoon, gently float 0.25 oz blue curaçao on top of the foam so it forms a distinct blue layer/pool on the foam surface.

Finish & Garnish

    Garnish with a lime wheel or a lime twist rested on the rim or floated on the foam. Serve immediately.
