    Prepare the Citrus Butter

    In a small saucepan, melt the unsalted butter over low heat. Once melted, add the finely chopped shallot and minced garlic. Sauté for about 2-3 minutes until the shallot becomes translucent.

    Stir in the lemon juice and orange juice into the melted butter mixture, and season with salt and black pepper to taste. Remove from heat and set aside.

Grill the Oysters

    Prepare the Grill

    Preheat your wood-fired grill to a high temperature. Make sure the grill grates are clean and well-oiled to prevent sticking.

    Place the Oysters

    Carefully shuck the oysters or leave them in their shells. Place them on the grill, ensuring they are stable and won't tip over.

    Add Citrus Butter

    Spoon a generous amount of the prepared citrus butter onto each oyster.
