Prepare the Glass
Chill a cocktail glass by filling it with ice water and setting it aside while you prepare the drink.

Mix the Ingredients
In a cocktail shaker, combine the Bristow gin, Blue Curacao, and pineapple juice. Fill the shaker with ice and shake vigorously for about 15 seconds.

Muddle the Mint
Take the fresh mint leaves and gently muddle them in the bottom of the shaker before adding the other ingredients to release their flavor.
Serving

Strain the Drink
Remove the ice water from the chilled cocktail glass. Strain the mixture from the shaker into the glass using a fine mesh strainer to catch any mint leaves.

Garnish
Garnish the drink with a pineapple wedge and a sprig of fresh mint on top.
