Method
Cake
- 1
Prepare the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2
Mix Dry Ingredients
In a large bowl, sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
- 3
- 4
Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Stir in the boiling water until the batter is smooth.
- 5
Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- 6
Cool the Cakes
Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
Burnt Marshmallow Cream
- 7
Toast the Marshmallows
In a large saucepan over medium-high heat, add the marshmallows. Stir continuously until they begin to melt and turn golden brown.
- 8
Prepare Cream
Once the marshmallows are burnt and melted, remove from heat and slowly fold in the heavy cream and vanilla extract until smooth and fluffy.
- 9
Cool the Cream
Allow the burnt marshmallow cream to cool to room temperature before using.
Graham Cracker Crust
- 10
Prepare the Crust
In a medium bowl, mix together the graham cracker crumbs, melted butter, and granulated sugar until well combined.
- 11
Press into Pans
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the oven at 350°F (175°C) for 10 minutes, then allow to cool.
Cayenne Chocolate Ganache
- 12
Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- 13
Make the Ganache
Place the chopped dark chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let sit for 2-3 minutes. Stir until smooth and add cayenne pepper.
- 14
Cool the Ganache
Allow the ganache to cool slightly before using it to drizzle over the assembled cake.
Assemble the Cake
- 15
Layer the Cake
Place one cake layer on the graham cracker crust. Spread a generous layer of burnt marshmallow cream over the cake.
- 16
Add Second Layer
Place the second cake layer on top and repeat the process with more burnt marshmallow cream.
- 17
Drizzle Ganache
Pour the cayenne chocolate ganache over the top of the cake, allowing it to drip down the sides.
- 18
Chill and Serve
Refrigerate the cake for at least 1 hour before slicing and serving. Enjoy your delicious S'mores Cake!
